(makes 7 – I do a double batch!)
50g dark chocolate
50g muscovado sugar – I couldn’t find this so used light brown sugar instead!
25g butter (melted)
125ml milk (heated to room temperature)
1/2 teaspoon baking powder
75g white chocolate (chopped)
75g milk chocolate (chopped)
Preheat oven to 200 degrees c.
Melt dark chocolate, stir in sugar and butter, then milk, then egg. Sift in flour and baking powder (I never sift!). Add the chopped white and milk chocolate (I bashed it using rolling pin!), using metal spoon fold together quickly – being careful not to over mix… Divide between paper cases – pile up in the middle. Bake in centre of oven for 20-25mins – or until well risen and firm to the touch….
