Vicki’s Gingerbread

50g Butter [soft]

75g Brown Sugar

1 Medium Egg

250g Plain Flour [Vicki’s were gluten free but you can use regular flour if you wish]

1 teaspoon Bicarbonate of soda

1 teaspoon Ground Ginger

1 teaspoon cinnamon

1 teaspoon nutmeg

3 tablespoons of Golden Syrup


  1. Pre-heat oven 180°c / gas mark 4
  2. Mix together in a large bowl the flour, butter, ginger, nutmeg, cinnamon and bicarbonate of soda until it is a bread crumb consistency
  3. Add the sugar, golden syrup and egg and mix together it all together until it forms a firm  dough
  4. Spread a little flour on your worktop and gently roll out the dough until it is around 5mm thick
  5. Use the cookie cutters of your choice (or a glass!) carefully cut out your shapes and place on a silicone baking sheet or some grease proof paper and prick each biscuit.
  6. Place in the oven for 10-15 mins
  7. Take them out and let them cool before eating (if you can resist temptation)
