Auntie Kath’s Everyday Fruit cake

150 grams Caster Sugar

150 grams Soft Margarine

3 Eggs

250 grams mixed dried fruit (including dates – delish)

50 grams mixed peel

50 grams glace cherries (chopped)

200 grams plain flour

½ teaspoon of baking powder

¼ teaspoon mixed spice

1 tablespoon milk

  1. that looks really good but margerine is not as good as butter cos it has transfats which are basically runny fats made to go hard by a process and that process is not good cos it makes a fat which our bodies can’t deal with so it lies about thickening arteries etc. Butter also supports our dairy farmers. I love your posts and your plans though!

    • Hi there, thank you for reading, glad that you are enjoying it! We love a bit of real butter (the one from our local deli is amazing), but this recipe works really well with margarine, perhaps next time we could try it with butter and compare!
