Grandad Gray seems to have a bumper bumper crop of beans this year. Every time we see him we are given more beans. The first 5 times we were pleased but come our 87th bag of beans we weren’t so excited!
That is……until we discovered this little recipe!
Cook beans until almost tender, this can be done in the microwave or on the hob. In a heavy pan fry a good handful of flaked almonds with a chopped clove of garlic.
When the nuts are starting to turn brown add the beans and fry for about a minute.
Squeeze the juice of half a lemon over the beans and fry for about another 30 seconds.
Remove from the heat and serve as a delightful summer side dish!
