beans 1Grandad Gray seems to have a bumper bumper crop of beans this year. Every time we see him we are given more beans. The first 5 times we were pleased but come our 87th bag of beans we weren’t so excited!

That is……until we discovered this little recipe!

beans 2Cook beans until almost tender, this can be done in the microwave or on the hob. In a heavy pan fry a good handful of flaked almonds with a chopped clove of garlic.

beans 4When the nuts are starting to turn brown add the beans and fry for about a minute.

beans 5Squeeze the juice of half a lemon over the beans and fry for about another 30 seconds.

beans 6Remove from the heat and serve as a delightful summer side dish!

  1. mmm sounds scrummy…Ive got loads of beans growing too!….Ive been doing some cooked & chopped into a bowl of hot rice with a spoonful of garlic paste, chilli paste and some lemon curd stirred through…believe me it works!!! (also nice cold as a salad dish next day)

  2. That does look good! I’ll try that over the weekend.
    I make a green bean and egg curry which uses up a few.
    I also make a green bean relish (chutney, basically!) which is very good. I was sceptical about beans in chutney- thought the texture would be odd- but it works really well. It’s my oldest’s favourite- she eats it with anything and hides the last jar so nobody else will eat it. I can email you the recipe if you’re interested.
