Mrs Robinson’s Muffins and a few more dresses

muffins 5Becksie and Lizzie popped over to Birmingham last week to see Grannie and Grandpa Pugh and of course the lovely Uncle Phil. A lovely time was had by all and on the Thursday Autie Kath – you know the lovely lady who makes a fab everyday fruit cake  and the lovely Mrs. Robinson came over and we made some more dresses for the dress a girl around the world project.

muffins 4The day was lovely and we chatted and sewed as Lizzie and Grandpa got up to all sorts of mischief in the living room.

Now at the start of the day when the lovely Mrs. Robinson arrived to clock into Pugh’s dress factory she did not arrive empty handed…….. she came with a box full of the MOST AMAZING muffins in the world!

muffins 1 Now these muffins were still warm from the oven – crunchy on the top and soft on the inside a delight! So…….. in true Becksie style she asked for the recipe so that we could share it with everyone.

Mrs. R sent over the recipe and we were delighted to see it was possibly the easiest recipe ever – so here we are a 5 star recipe!

Sweet Potato and Pecan Muffins.

2 eggs (beaten)

200g caster sugar

225g cooked mashed sweet potato

120ml oil

80ml water

200g plain flour

1 teaspoon ground cinnamon

1 teaspoon bicarbonate of soda

½ teaspoon bake powder

½ teaspoon salt

75g chopped pecan

And here’s the how………

Add dry ingredients  to the wet and mix

Bake at 180c for 25 min

  1. They look wonderful!!! I really like the sound of that recipie, Ill be trying that later in the week, I might give it a go with pumpkin too sometime. I didnt know blogs could be so bad for the waistline – but this one is!!! In the nicest possible way though!!

    I love the picture too, one to treasure I think!
