What to have for dinner? Erm the big question when you think you don’t have much food in the house. Now in the past tonight would definitely been on of those nights where we simply popped to the local supermarket and purchased about 15 items that we didn’t really need just because we thought we didn’t have much food in the house!
So as we can’t do this we took a step back and thought ‘errmmm what do we actually have’. Start in the fridge – we have:
Ok, Ok lets try the freezer…….. lots of batch cooked food but….. we now have the guilts about the veg lingering in the fridge that needs eating before our market trip tomorrow – ermmm! Well there is some frozen leftover chicken. Ok Chicken and veg – pantry time! Some coconut, sultanas and almonds! Chicken Korma it is then!!
Now as we write this we know there will be much much better curry makers out there – we don’t profess to be hugely good at this dish but we do make our own curry paste and if you’re at all interested here’s what we use for Korma –
1 large garlic clove
A thumb size (Becksie’s thumb size) piece of root ginger
½ teaspoon of cayenne pepper
1 teaspoon of gram masala
½ teaspoon of sea salt
2 tablespoons of walnut oil
1 tablespoon of tomato puree
3 tablespoons of desiccated coconut
2 tablespoons of ground almonds
Fresh coriander (we didn’t have any of this today so we left it out)
1 fresh green chilli (as Lizzie is also going to eat this we left out the chilli)
2 teaspoons of cumin seeds (toasted in a dray pan)
So……. easy peasy really – place all of the ingredients in a pestle and mortar and pestle and mortar away until you have a lovely smooth paste. Use the paste to make your curry as you would do curry paste from the supermarket.
So a quick tea using our leftovers, no trips to the supermarket and the other sad looking veggies are destined to be made into soup and frozen in the space the chicken previously occupied! Perfect!
