A Little Bit of Drizzle

So today has been a very wet, cold and windy day here in Faringdon! If it’s not been pouring with rain its been drizzling! Lizzie and Becksie have colds and the cats………… are very very grumpy because it’s a) cold b) windy and…….. they have the muddiest paws in the world which is making Becksie even more grumpy!

So as Lizzie, Becksie and the cats are feeling a little drizzly we decided that there was only one thing to do……… make a cake!

A quick look in the fruit bowl revealed two lemons that needed to be put to good use (they’ve been there a whiles oops)! So cake + lemon +drizzle equals a classic……. Lemon drizzle Cake!

Now we didn’t bother to look at a recipe as we knew what we wanted, a light, lemony, sugary affair that would help us forget the dark rainy outside and cheer us with the lovely sticky delight that is lemon drizzle! So this is what we did:

Gather together:

150grams of butter

150grams of sugar (now really we wanted to use caster but we didn’t have enough so we used ordinary sugar)

3 eggs

150grams of self raising flour

2 lemons zest and juice

30grams of caster sugar for the topping

Preheat the oven to 190c

Cream the butter and sugar until pale – it really is worth spending about 10mins doing this (it is a little boring but it makes for a much lighter cake).

lemon 4Add the eggs, flour, all the zest and the juice of one lemon – fold together gently.

lemon 6Place in the greased and lined loaf tin and then bake for approx 35mins until golden and a skewer comes out clean! Whilst it is baking mix the juice of the other lemon and the caster sugar together.

Take out the oven and prick the hot cake – drizzle with the lemony sugary mixture and allow to cool! Slice and serve! Delicious!!

  1. Great minds think alike! Is my plan to make a lemon drizzle cake today as I have eggs and a lemon that rather desperately need using. I hope it turns out as well as yours which looks delicious 😀
