So…… today is Becksie’s birthday and …….. it is her last ever birthday in her 20’s! Oh well! The day started with a bit of a lie-in and then aunty Leah arrived with some birthday cheer and some amazing (the best ones she’s ever made) white chocolate and cranberry muffins!
So then Becksie opened her gifts and the first one from Lizzie was……………………………….. some lovely fabric that is simply beautiful – she may only be 8 months old but the smallest member of Team Pugh has mighty fine taste in fabric!
Next came some stripy socks from Ian to Becksie! Now these are usually a Christmas tradition but (much to Becksie’s upset) he forgot this year so Becksie was overjoyed when he redeemed himself as the ‘giver of stripy socks’ this am!
Now it would seem that one or two people who gave Becksie gifts have been reading this little blog as quite a few of Becksie’s gifts were to inspire future posts – these gifts are amazing and Becksie is feeling extremely inspired! In fact she can’t wait to get started on new projects, read the lovely books and share some new ideas with everyone!
100 grams Plain Flour
50 grams Demerara sugar
100 grams dried cranberries
100 grams chopped chunks of white chocolate
2tsp baking powder
1 tsp cinnamon (the secret ingredient so I’m told)
50 grams melted butter
Preheat the oven to 190c
In a large mixing bowl combined the flour and baking powder and mix up with a fork (you could sift it but this is a much quicker way to do it). Stir in the sugar, cinnamon, cranberries and white chocolate chunks. Make a well in the middle of the flour and add the milk, melted butter and egg and mix it all up (not really well just enough so its combined).
Divide the mixture between 12 muffin cases (for small muffins) or 6 muffins (for big ones) bake for approx 20 mins until well risen (if you are making big ones the you will need to cook for longer)!
